Origin story

Born of frost, raised in red earth.

In 1975, a black frost wiped out the coffee groves of Paraná, in Brazil's south. The growers who lost everything moved north, to the high savanna plateau of Cerrado in Minas Gerais, where the soil runs deep red. By the 1980s, coffee had taken root. Open each step below to follow Shaman's Wisdom from that plateau to your cup.

4,500+ growers

On the plateau, per our importer

Cerrado is a coffee region in Minas Gerais, Brazil's largest coffee-producing state, and Brazil is the world's largest supplier of Arabica. It's a large, mostly flat savanna plateau of red earth that locals call Terra Roxa. Coffee became a major crop here in the 1980s, planted by growers who had started over after the 1975 frost. Shaman's Wisdom is a regional lot, partner-sourced from this growing community rather than from one named farm.

915–1,219 m

High savanna plateau

This lot grows at 915 to 1,219 meters. Steady rains, hot days and dry winters give the cherries a long, even ripening, and the result is a cup built on body and sweetness rather than sharp acidity.

4 cultivars

Acaiá, Mundo Novo, Red and Yellow Catuaí

The lot blends four Arabica cultivars: Acaiá, Mundo Novo, Red Catuaí and Yellow Catuaí. Brazil leans on mechanical harvesting: Cerrado's flat land lets machines comb the trees, and newer harvesters can pick mostly ripe cherries.

Natural

Dried in the fruit

Shaman's Wisdom is natural process: the whole cherry is dried with the fruit still around the bean, here in a mechanical dryer, so the fruit's sweetness settles into the seed. The beans are graded screen 17/18, between 17/64 and 18/64 of an inch: large and uniform, so they roast evenly.

Baltimore

Roasted here

Shaman's Wisdom arrives as green coffee and is roasted here in Baltimore, with our packaging sourced in Baltimore too: we're a Baltimore-first business. Roasting here supports local coffee shops, and every bag ships in eco-conscious packaging under strict delivery standards. Restaurants, bars and shops can carry it too, as green or roasted coffee.

“Where do you start when you have so many great coffee choices to try... well you try them all. Naga's Charm Coffee is exceptional and after working for 5 years in the coffee industry I developed a palette that is spoiled. That same palette is no longer thirsty since finding NCC and now I can't wait till the weekends when I usually brew my coffee.”

Questions

Where does this coffee come from?

The Cerrado plateau in Minas Gerais, Brazil, grown at 915 to 1,219 meters. It's a regional lot from Cerrado's growers, not a single named farm.

What does the flavor actually taste like?

Warm and spiced: turmeric and sweet peppers, with candied apricot, a fuller body, soft acidity and a rounded finish.

What does natural process mean?

The whole coffee cherry is dried with the fruit still on the bean, instead of being stripped and washed first. The fruit's sweetness settles into the seed, which is a big part of this cup's body.

What is Terra Roxa?

The deep red earth of the Cerrado plateau, as locals call it. It's where Shaman's Wisdom grows.

How should I brew it?

It's at its best as espresso, house drip or cold brew, and it takes milk well. Try it with apricot or spiced pastries.

Which grind should I choose?

Whole bean keeps it fresher longer and is the better choice if you grind at home. Without a grinder, pick the grind that matches how you brew.

How should I store it?

Sealed, away from light and heat, at room temperature. Skip the freezer: the moisture swings do more harm than good.
